I am a rube who uses Windows. There are periodic required updates. It seems like tasks sometimes error out after running automatic updates. Is there a way to save my work before running updates so this does not happen? Will exiting Boinc before running automatic updates take care of it? Thanks-

No and no. The ability to restart a task depends on the project's application program being able to:

a) Write a complete statement of where it's got to so far before shutting down.
b) Read back those files and re-create the state it was in internally.

The combined processes are called 'checkpointing', and this project has difficulty getting them to work.

The alternative solution is to prevent Windows from installing updates automatically. You can delay updates for up to five weeks (possibly depending on your precise version of Windows): hold them off for as long as possible, and when it's convenient, pause the flow of GPUGrid tasks, and when the last one has completed, allow Windows to do its worst. Repeat as needed.
